This webinar will provide a quick overview of the cannabis industry and a discussion on the 2.0 products, such as edibles and beverages.  We will discuss the challenges in building the industry, how these products are produced and viewed and what lessons the cannabis industry can take from the food industry.

Sam Davidson – BOD, OFPA

Sam Davidson has over thirty years of food safety experience in food manufacturing and foodservice sectors with extensive experience in HACCP, SFCR, FSMA, PCQI and GFSI requirements. Sam has held positions in production, auditing, corporate, training and consulting, all focusing on food safety. He is currently Director, Food Safety with Compass Minerals, a leading global provider of essential minerals, specializing in salt for food, industry, deicing and specialty plant nutrition, where he is responsible for the food grade facilities in North America.

Shannon McCoy – Vice President of Quality Assurance and Regulatory Affairs at Organigram
Global

Shannon McCoy has held roles in quality management over the past 30 years of her career.
She is currently the Vice President of Quality Assurance and Regulatory Affairs at Organigram
Global. Her focus is on the development and implementation of the Cannabis Quality and
Compliance programs to support the strategic direction of Organigram and advance the
The company’s maturity in Quality and Regulatory, both in corporate direction and on the shop floor.
Shannon is passionate about the critical impact that quality management systems and culture have
have on the overall strategic, financial and consumer success of a business.
Prior to joining Organigram, Shannon was the Vice President of Quality at HEXO and previously
Director of Food Safety and Quality at Maple Leaf Foods, with responsibility for development and
implementation and execution of the corporate Food Safety and Quality programs across all
sites in Canada and the US.
Shannon has previously held roles in national business management, as the Canadian Business
Manager for Diagnostics with DuPont, where she led the support of diagnostic technologies for
rapid pathogen detection, including collaboration with Health Canada, CFIA, and Standards Council
of Canada and the USDA for method approvals. Prior to her role in Diagnostics, Shannon achieved
Six Sigma Black Belt status, and was a founding member of the Food Safety Risk Assessment
consulting business at DuPont Canada, providing consultation and collaboration with the industry in
North America and Europe, including the development of microbial mapping techniques for
environmental monitoring. She successfully brought these techniques out of the plant and onto
The farm to support Salmonella reduction strategies in poultry grow-out operations globally and
improve animal welfare in pork farm operations in Quebec and the Netherlands.
Shannon holds a BSc from the University of Toronto in Cell and Molecular Biology. She has
worked at Organigram since June 2023 and sits on the Board of Directors for the Cannabis
Standards Alliance of Canada (CSAC).
